For most Americans the week begins on Monday. On Monday we move from the freedom of the weekend back to the structure of work or school. We set our intentions for the next six days. We plan ahead and evaluate progress. Monday the perfect day to make a change for your health and the health of our planet. Awareness of the Meatless Monday campaign and its “one day a week, cut out meet” manta has grown to 50.22 percent, up from 30 percent just six months ago. And nearly a third of those who know about it are cutting back on their meat consumption. Awesome, right?

Last year, the San Francisco Board of Supervisors unanimously approved a meatless Monday resolution, sponsored by Supervisor Sophie Maxwell. The measure declares every Monday as “Vegetarian Day” and urges restaurants, grocery stores and schools to offer more plant-based options.
